Christmas Baking with Tree of Life

Tree of Life is the UK’s largest wholesale distributor of healthy, natural and organic products. They very kindly sent us each a box of goodies just in time for Christmas for us to make some delicious baked goods!

Annie’s White Chocolate & Cranberry Cookies

I absolutely love white chocolate & cranberry cookies and they are my boyfriends favourite as well- so he was super happy when I decided to make them! The ingredients Tree of Life sent us were perfect for making these as well as they sent us some dried cranberries.

Ingredients
  • 130g blended oats
  • 70g blended hazelnuts (you could use almonds)
  • 4tbsp peanut butter
  • 2tbsp agave syrup
  • 3tbsp coconut oil melted
  • 100g White chocolate
  • 60g dried cranberries
  • 1tsp baking powder
Method
  1. Preheat your oven to 180oc.
  2. If you haven’t already blend your oats and hazelnuts in a food processor or blender.
  3. Melt the coconut oil in a pan and allow to cool slightly before pouring into the mixture.
  4. Add all the ingredients into a mixing bowl and stir until well combined.
  5. Take a spoonful of mixture and use you hands to roll into a ball.
  6. Place the cookie onto a lined baking tray.
  7. Bake the cookies for 10-12 minutes until golden brown.
  8. Leave to cool on a cooling rack and enjoy!

Rach’s Raisin Flapjacks

This is a healthier version of the classics flapjack and are so easy to make. Add to a pan some coconut oil and agave syrup and let it melt. Add as much syrup as you wish, if you like them gooey and sticky then obviously add more. I added some light syrup and some dark syrup to give it a treacly flavour. Once melted pour in some oats and stir. Finally add some raisins as many as you wish!

Cook in the oven at 180 degrees for 10 mins or until golden. Cool and enjoy!
