This recipe really felt like a blast from the past, we found it buried away at home! We used to make these cinnamon swirls in our food technology class back in the day!

They are super delicious, we love cinnamon and you can’t beat a yummy cream cheese frosting! These would be perfect as part of an afternoon tea or you can just enjoy them with a cup of tea like we did!

Ingredients

Dough ingredients

  • 250g strong bread flour
  • 25g sugar
  • 1 sachet easy blend dry yeast
  • 25g butter
  • 1 egg, beaten
  • 125ml milk
  • 1tsp cinnamon

Filling

  • 50g butter
  • 50g sugar
  • 2tbsp cinnamon

Icing

  • 75g mascarpone
  • 75g butter
  • 200g icing sugar, sifted
  • 1/4 zest of lemon

Method

  • Pre heat the oven to 180oc
  • Put the flour, cinnamon, sugar and butter into a mixing bowl, rub the fat in so it resembles breadcrumbs
  • Add the yeast sachet to the mixture and mix well
  • Add the egg and milk and make the mixture into a soft dough
  • Knead the dough for 10 minutes
  • Roll out the mixture into a rectangle
  • Mix all the filling ingredients together using a mixer and spread all over the dough
  • Loosely roll up the dough
  • Cut the dough into 8 equal size pieces and turn over before placing on a lined baking tray
  • Place the cinnamon swirls somewhere warm (I left them on top of a warm radiator) and let the dough double in size
  • Bake in the oven for 10 minutes
  • Whilst the buns are baking or cooling you can now make the icing. Put all the icing ingredients into a mixing bowl and cream together until well combined
  • Once the buns are completely cool ice them and serve!
