We had some leftover icing from when we made our cinnamon swirls so I thought instead of it going to waste I would use it for another recipe! Now if you don’t want to add the cream cheese frosting to these carrot cakes you totally don’t have to they taste delicious without!

These Carrot Cake Bites are the perfect snack anytime of day! They are filling and full of flavour! My family loved them and have requested I make them again!

Ingredients
- 200g Oats
- 1 large carrot peeled and grated
- 50g raisins
- 50g walnuts
- 75g melted butter or coconut oil if you want to make them vegan
- 3tbsp peanut butter
- 4tbsp maple syrup
Method
- Pre heat the oven to 180oc
- Crush the walnuts until they are in small pieces I used a pestle and mortar!
- In a large mixing bowl add the oats, grated carrot, walnuts & raisins and stir until well combined
- In a saucepan melt the butter over a low heat, once melted add the peanut putter and maple syrup and stir until well mixed
- Pour the liquid mixture into the dry ingredients and stir until all the dry ingredients are coated
- Take table spoon amount of mixture and use your hands to roll the mixture into balls
- Place the balls onto a lined baking tray
- Bake for 15 minutes and allow to cool before tucking in!
- If you want to ice them make sure that you combine the sugar, butter & lemon zest using a mixer and then spread on top once cooled!
