Vanilla cupcakes are nice and easy to make and the perfect after dinner treat.
After eating a big meal you often don’t fancy a big dessert but a small cupcake is just perfect. Plus this makes about 10 so you will have some to have the next day too!
We decided to make our simple cupcake recipe and then decorate with pink fondant icing and using letter stencils to create words . You can decorate them however you would like, full creative mode can kick in!
Cupcakes:
120g butter
120g sugar
2 eggs
120g flour
tsp baking powder
drop vanilla essence
Icing:
Pink fondant icing
jam or glace icing to stick
Method
1) Preheat the over to 180 degrees and put 10-12 cupcake cases into a cupcake tray (we used plain white ones, but pink ones could be cute too!)
2) For the cake beat together the butter and sugar in a free standing mixer or hand mixer, beat until the mixture is fluffy.
3) Crack in the eggs, sift in the flour and add the baking powder and vanilla essence. Beat until the mixture is combined but do not over mix.
4) Spoon the mixture into the cases and then cook in the oven for 12 minutes. A skewer should come out clean and they should look golden. Leave to cool
5) For the icing, roll out your fondant, cut out circles using a cutter and press your words on top
6) If you want to use jam to get the icing to stick on the top then warm a small pot of jam in the microwave and then spread on top. Then place your circle fondant on top. Or make a small amount of glace icing as per packet and spread on top of the cupcakes and use them to stick the fondant on top.
