Jackfruit BBQ Pulled Pork Tacos

My boyfriend turned vegetarian at the start of lockdown so whenever I am at his we always experiment and make some delicious vegetarian meals! We have had jackfruit quite a lot in tacos and fajitas but I have never made a ‘pulled pork’ style jackfruit!

This was absolutely delicious, it did take slightly longer to make than I first anticipated but it was super easy to make!

Ingredients

  • 500g Jackfruit
  • 3 tbsp Tomato purée
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Lemon juice
  • 1 tbsp Honey
  • 1tbsp Sriracha (optional)
  • Salt & Pepper for seasoning
  • Tacos shells
  • Optional toppings: lettuce, grated cheese, guacamole, cucumber & tomato

Method

  • Pre heat the oven the 180oc
  • Heat some oil in a pan and add the jackfruit. Fry the jackfruit for around 5 minutes on a medium heat.
  • In a mixing bowl add the tomato purée, Worcestershire sauce, lemon juice, honey, sriracha & seasoning and mix until well combined.
  • Pour 3/4 of the sauce into the frying pan and save a 1/4 for later. Allow the sauce to cook for a couple of minutes before transferring the Jackfruit onto a baking try.
  • Put the jackfruit in the oven for around 25 minutes. Remove the baking tray after 25 minutes and add the remaining bbq sauce. Cook for another 10 minutes until the jackfruit is slightly crispy but still juicy.
  • Now for the fun part where you can start to build you tacos! We went for bbq pulled pork, lettuce, cucumber, sliced tomatoes, cheese and some salsa it was delish!!
