5 Healthy Lunches to enjoy whilst WFH

When working from home it can be super easy to just wander over to the fridge and eat the first thing you see! We find that if we do this we tend to just snack throughout the day and don’t actually a proper lunch!

Eating breakfast and lunch for us breaks up the day! We tend to eat lunch at around 1pm and like to mix it up each day! We thought we would put together some of our favourite lunches to enjoy!

Hummus, crudités & pitta bread

Hummus is such an easy lunch to enjoy, there are so many different varieties in the shop now as well. We also like to make our own as well, it’s super quick and so cheap to make so will save you some pennies as well!

We like to enjoy our hummus with crudités and pitta bread! If we don’t have any pitta bread then you can also dip in toast! We also like to dip pop chips into hummus!

Homemade tuna & tomato pizza

My mum made this most delicious tuna & tomato pizza the other day! It was a super quick and easy recipe but so so tasty! If you don’t want to make your own base then you could alway use a tortilla wrap!

Salad

Now the weather is getting slightly warmer we always gravitate towards a salad. There are so many different types of salad and to be honest most the time we just throw lots of different bits and bobs in to make it tasty! It doesn’t have to be boring and just lettuce leaves, be inventive and use up what you have in the fridge.

This week I enjoyed a Salad Nicoise which was so delicious! We also love a Greek salad (without the red onion) we are totally addicted to feta cheese and love adding some hummus as well YUM!

Homemade Soup

During the winter months we basically lived off of homemade soups! My mum always makes so many different varieties so it never gets boring. Making soups goes such a long way as well and it is full of so many nutrients!

Make a batch of soup and either keep it in the fridge or freeze it in individual soup pots and enjoy when you fancy it! We also have a soup maker that we use that is from Morphy Richards!

Homemade Quiche

I (Annie) love homemade quiche and my mum makes it all the time for dinner so there is always plenty left over for lunch the next day. This week we enjoyed a bacon and leek quiche and it was just so delicious! I also love a broccoli quiche and a smoked salmon one YUM!
