Let’s pretend we are in Spain and make a super easy but tasty chicken and chorizo paella!
Ingredients:
- 1tbsp garlic olive oil
- 200g chopped onion
- 2 tsp chopped garlic
- 2 tsp paprika
- 1 tsp tumeric
- 250g Spanish paella rice
- 800ml hot chicken stock, made with 1 chicken stock pot
- 300g garden peas
- 100g chorizo ring, roughly chopped
- 400g mini chicken fillets, cubed
Method:
Fry the onion and garlic in the garlic oil in a large frying pan
Once soft add the paprika and turmeric
Add the paella rice and stir
Make up the chicken stock and pour into the pan and then bring to the boil
Once up to the boil leave to simmer
In another pan fry the chorizo for a couple of minutes
Remove the chorizo from the pan and then add the chicken to this pan
Add the peas to the paella pan for a couple of minutes
Once the chicken is cooked, add the chicken and the chorizo to the paella pan and mix
Serve and enjoy
