Plum Crumble Baked Porridge

Autumn is definitely on its way and the colder mornings have left us wanting a warm bowl of porridge. We are definitely missing the summer but we are enjoying not getting the porridge sweats in the morning, if you know you know!

At the weekends we always enjoy tucking into a scrumptious bowl of baked porridge experimenting with lots of different ingredients. This time we decided to go for a plum crumble baked porridge which was absolutely delicious and probably one of our favourite ones yet!

Ingredients
40g porridge oats
1 or 2 plums depending on the size
50ml Almond milk (or any milk of your choice)
1tsp peanut butter

Method
Pre heat the oven to 180oc
Destone the plum and chop into small slices
In a small mixing bowl add in all the ingredients and stir until well combined
Pour the mixture into a ramakin dish
Bake in the oven for 25-30 minutes making sure the top is golden brown
Enjoy with a cup of coffee or tea

Cherry Bakewell Baked Porridge

We recently we visited Bakewell and it inspired us to make some cherry bakewell baked porridge. If you have never heard of Bakewell it is 18 miles from Sheffield in the Peak District. Bakewell is a quaint little village full of cafe’s and bakeries that sell cherry bakewells (surprise surprise)!

Baked porridge is ridiculously easy to make and if you have never tried is before we suggest you do because it is SO delicious! the oats go all fluffy and cake like when put in the oven and its a perfect way to start your morning because who doesn’t want cake for breakfast?

Ingredients
40g Oats
1/4 tsp baking powder
1.5tsp Almond butter
& Pitted cherries (we used frozen)
50ml almond milk
Small handful of flaked almonds

Method
Pre heat your oven to 180oc
Place your oats & baking powder into a mixing bowl and mix
Add the remaining ingredients and stir until ingredients are combined
Place your mixture into a heat proof ramekin dish
Sprinkle some flaked almonds on top
Place in the oven for 20 minutes
Enjoy!

March Favourites 

March has been a great month! We have celebrated a birthday, saw one of our closest friends get married, both got new jobs, started a YouTube channel and most importantly finally tried Leon porridge which by the way is SO delicious!

Overnight oats-  We had never tried overnight oats before this month and to be honest they sounded gross, who wants to eat cold oats? How wrong were we! With work Annie has to travel a lot so on the go breakfasts are exactly what she need so decided to try them! It’s safe to say we both have been loving them and Annie looks forward to them every morning if she has to get up and go somewhere early! We will be posting a recipe soon so make sure you look out for it!

VLogging- In March we filmed our first ever vlog, it was our friends wedding day so we thought it would be a nice start to our YouTube journey. We absolutely loved it and although we have a lot to learn still we are having so much fun! If you have been thinking about vlogging for a while but haven’t stated yet we are telling you to just bite the bullett and go for it!

Mornflake- We have been loving Mornflake this month they have some amazing products you all need to try. First up is their no added sugar granola oh my gosh it’s so nice to find a granola that isn’t packed with extra sugar. This granola is so moorish and one bowl isn’t enough. We have loved it so much we have already finished our bag and trust us the bag isn’t small! You can taste that it hasn’t got lots of added sugar in but it’s actually really nice to have a granola that isn’t overly sweet. They also sell individual protein porridge sachets which are great, the portion size is perfect and much bigger that some other brands that sell individual sachets so it definitely won’t leave you feeling hungry.

Hangry- We tried hangry snack bars for the first time this month and absolutely loved them. We especially enjoyed the original flavour it was so good! They are the perfect afternoon snack when you need something to satisfy your hangry belly!

TRX workouts- We have been incorporating the TRX into our workout routines lately. It’s a great piece of equipment at the gym and you could even use it for your entire workout. We are planning on filming a YouTube video all about the TRX and the different exercises you can do using it.

Nutri Ninja – We had a basic blender but it wasn’t very powerful so decided to purchase a more powerful blender as they are ideal to make pancakes, smoothies, juices etc. We love our Nutri Ninja firstly because its so easy to clean (everything can go in the dishwasher!), and secondly because it whizzes up food in seconds. We have been experimenting with lots of different recipes, with our first one live already – watch this space for more to come!

We cannot wait for April as we are off to Paris for the weekend – BRING ON DISNEYLAND, we are already planning our pictures, blog posts and we are super excited to vlog the whole weekend! However before that we are both going away for Easter with Annie off to Suffolk and Rach off to Northern Ireland. We are both going to vlog our holidays so make sure you watch it. In addition Annie can finally eat chocolate again! What exciting things do you have planned for April?

Banana bread baked porridge

We absolutely love experimenting with oats, especially when we are making our porridge (also known as oatmeal in the USA). Porridge is the perfect winter warmer on a cold February morning helping us to refuel after a morning workout.

We love banana bread so we decided to make our very own banana bread baked porridge. This recipe is absolutely delicious and we would recommend making it as soon as you can. We do put nuts in this recipe but if you have an allergy then it still tastes delicious without.

Ingredients
50g Oats
1 ripe banana
50ml milk of your choice
30ml water
3 walnuts chopped

Method
Pre heat the oven to 180oc
Mash your banana in mixing bowl
Add in the oats and walnuts and then stir until combined
Pour in the water and milk and continue to mix
Place in the oven for 25/30 minutes until the oats are cooked and the colour is golden brown.

Healthy & Unhealthy Flapjacks-Deliciously Alchemy 

We absolutely love living an active healthy lifestyle, but we also love to bake goodies for ourselves and our families. Nothing beats getting in the kitchen and baking delicious sweet treats! We bake when we are happy, sad, stressed or just even bored, we find baking very relaxing and therapeutic.

We believe that living a balanced life is the key to succeeding and we don’t think you should restrict yourself from eating sweet treats occasionally. this weekend we decided to bake some healthy and unhealthy flapjacks using Deliciously Alchemy oats. These oats are gluten free but you could also use ordinary oats for the recipes below.

We LOVE flapjacks and the unhealthy version below are the gooiest sweetest most delicious squares of goodness you will ever try! Also you have to take a spoon and try the mixture before you cook them you wont regret it! The healthy flapjacks make the perfect on the go breakfast or they can be enjoyed as an afternoon snack.

Raw Cacao & Banana Flapjacks 

Recipe 
250g Deliciously Alchemy gluten free oats
300g Banana mashed
50ml Maple syrup
5 Tbps Raw Cacao Powder
350ml Almond Milk (or a milk of your choice)

Method
Pre heat the oven to 180oc
Line a baking tray with grease proof paper
mash the banana in a bowl
Add the oats and raw cacao power to the mashed banana and mix together
Pour in the milk and maple syrup and mix until combined
Bake for 20 minutes

Gooey chocolate flapjacks

Recipe
300g Deliciously Alchemy gluten free oats
125g dark brown sugar
125g Butter
200g Milk or dark chocolate
6 tbsp golden syrup

Method
Pre heat the oven to 180oc
Line a baking tray with grease proof paper
Melt the butter and sugar over a low heat
Gradually add the oats and stir as you go
Once the mixture is combined add the golden syrup
Stir in the chocolate
Pour the mixture into the lined baking tray
Bake for 15-20 minutes

BLOGMAS Day 4- Baked Christmas Porridge

When someone says breakfast porridge is the first thing that comes to our mind. We cannot get enough of the stuff especially during the winter months when the mornings are so much colder. We have experimented with porridge a lot over the past year and even have a porridge series on our blog (recipes include Peanut butter and jelly & a taste of autumn).

We knew during blogmas we had to create a porridge recipe, we have mixed it up a bit though and gone for a baked porridge. This is the first time we have ever cooked baked porridge but oh my goodness it was delicious and we will definitely be having it more often.

It does take slightly longer to cook than ordinary porridge, so we will probably have to save this for the weekends when we have much more time on our hands.  We hope you have fun recreating our recipe and let us know what you think!

Ingredients
50g Porridge oats
30ml Milk of your choice (may need more depending on the size of your bowl)
Drizzle of water
Red currants fresh or frozen (we used frozen)
Chopped mixed nuts
½ tsp Ground Cinnamon
½ tsp Ground Ginger

Method
Pre heat the oven to 180oc
You will need an oven proof dish we got ours from tiger
Place the oats and nuts into the dish and stir so ingredients combine
Scatter the red currants on top
Pour your milk on top of the mixture and top with water
Place in the oven for 15-20 minutes

Livia’s Kitchen Blueberry Porridge Squares


When we came across Livia’s Kitchen Blueberry Porridge Squares we knew we had to make them. If you read this blog regularly or follow any of our other social media platforms you will know we are obsessed with porridge, so of course we were going to jump at the chance of making these delicious sweet treats.

The blueberry porridge squares only contain 5 ingredients all of which are healthy and nutritious (and you are most likely to have the ingredients in your kitchen cupboard which is a bonus and makes the recipe inexpensive). They took us less than 5 minutes to prepare and cooking time was between 15-20 minutes. There are lots of other porridge square recipes on Livia’s kitchen and we are certainly going to be testing them out, the Cacao & banana ones look divine.

The squares would be perfect to have for breakfast if you are in a rush or as a mid morning of afternoon snack enjoyed with a cup of tea or coffee. We were going away for the weekend to Sheffield so thought they would be the perfect car snack for the 2 ½ hour drive.

The Porridge Series-2 (A taste of Autumn) 

Autumn is without a doubt one of our favourite times of year, we absolutely love summer but there is something about autumn that is so comforting. Grabbing a jumper and getting cosy on the sofa whilst sipping a hot beverage is perfection.

Nothing quite says autumn like the delicious spices: Cinnamon, nutmeg, ginger, cloves oh the list could go on for days.

In our porridge we decided to use Cinnamon. Cinnamon has been used for decades in both sweet and savoury dishes which you can buy either ground or rolled up as a stick.
This spiced apple porridge reminds us of a hot apple pie!

 A taste of Autumn 

Ingredients
50g Porridge Oats
250ml Almond Milk/ Milk or water
1 Apple (we used Pink Lady)
1 Tsp Cinnamon
2 Tbsp Water
Drizzle of honey

Method
Place your porridge oats in a bowl
Pour your liquid of choice on top of the oats
Place the oats in the microwave for 2-3 minutes (stir after one minute)
Once your porridge is cooked remove the bowl from the microwave and set aside.
Slice your apple
Place the apple in a clean bowl
Sprinkle the teaspoon of cinnamon over the apple evenly
Add 2tbsp Water to the apple and cinnamon
Place in the microwave for 2 minutes or until the apple is soft.
Place the apple on top of the porridge and add a drizzle of honey.

The Porridge Series- 1 (Summer Fruits)

Welcome to the porridge series episode 1, porridge is something we eat on a regular basis (okay almost every day). It is so versatile and there are so many different toppings you can add to keep it interesting. You don’t even have to add sugar/syrup or honey to make your porridge taste delicious.Stayed tuned and let us know if you try any of our recipes.

Strawberry Porridge

British strawberries means summer has finally arrived here in the UK. Bet you didn’t think you would enjoy anything more than fresh strawberries and cream this summer but wait until you try our fresh strawberry porridge.

Strawberries are only around in Britain during the summer months (June to August to be more precise). Strawberries from a local provider are by far the best, lots of people in the UK visit strawberry farms and pick their own (PYO). The flavour is incomparable to shop bought strawberries and think of all the delicious creations you can make with your handpicked strawberries.

Make sure you are gentle when washing your strawberries to avoid bruising and it is important to know you should remove the green hull after washing.

Healthy Facts- Did you know 5 strawberries contain more vitamin C than an entire orange. They also contain significant levels of antioxidants which help to fight disease.

Recipe
50G Porridge Oats

250ml Almond Milk/ Milk or water

6 Medium sized strawberries (other berries can also be added)

Method

Place the Porridge oats in a bowl

Pour your choice of liquid on top of the oats

Place in the oats in the microwave for 2-3 minutes (you might want to keep an eye on it as it sometimes has the tendency to bubble over the edge).

Once your porridge is cooked remove bowl from the microwave.

Remove the hull from your strawberries and put them in a clean bowl.

Stew the strawberries for 1 minute in the microwave

Pour your steaming hot strawberries on top of the porridge

Mix well and enjoy
